  1. 3 tablespoons olive oil

  2. 1 tablespoon red wine vinegar

  3. 1 1/2 teaspoons crushed dried basil

  4. 1 clove garlic, crushed

  5. 1 anchovy, mashed

  6. 4 tomatoes, cored and sliced

  7. 1 red onion, peeled and sliced

  8. 1 head lettuce, shredded

  9. 1/2 cup grated mozzarella cheese

  1. Instructions In a mixing bowl, whisk together olive oil, red wine vinegar, basil, garlic and anchovy; set aside. On a serving dish, layer tomato and red onion slices over shredded lettuce, sprinkling each layer with some mozzarella and drizzling each layer with some of the vinaigrette. Let stand for 15 minutes after assembling; serve at room temperature.
