  1. 4 Tbl.olive oil

  2. 1 small onion, chopped

  3. 2 cloves garlic,minced

  4. 1 c. crushed tomatoes in thick puree

  5. 1/4 teas. oregano

  6. 1/2 teas, salt

  7. 1/4 teas. fresh ground black pepper

  8. 1 lb. spinach,stems removed,washed,well shredded -- Sandwich:

  9. 8 thick slices of a round loaf country-style-bread

  10. 1/2 lb. mozzarella cheese,sliced

  11. 3/4 c. mild goat cheese, crumbled

  12. 8 slices pre-cooked bacon,

  1. Sauce: In a large saucepan, heat 2 Tbl. of the oil over medium low heat. Add the onion and cook,stirring occasionally, until translucent, about 5 minutes. Stir in the garlic,tomatoes,oregano, salt and pepper. Simmer for 5 minutes. Add the spinach and simmer until the spinach wilts and the sauce thickens, about 5 minutes longer. Cover and keep warm. -- Sandwich: Top 4 slices of the bread with mozzarella. Spoon some of the spinach mixture over each, spreading the spinach to the edges of the bread. Sprinkle the goat cheese over the spinach (if desired place 2 pre-cooked sliced of bacon on now) and top with the remaining bread slices. -- To Serve: In a large nonstick skillet, heat 1 Tbl. of the oil over moderate heat.Cook 2 of the sandwiches, turning once until the cheese melts and the is golden, about 4 minutes in all. Repeat with remaining oil and the other sandwiches, keeping the first batch warm on a baking sheet in a 200^ oven. NOTE: A 10 oz. pkg. of defrosted spinach can be used instead of fresh.Squeeze out excess liquid from thawed.Simmer the spinach in the tomato sauce just to warm it through.
