  1. 1 medium red onion, very thinly sliced , separated into rings

  2. 1/4 cup(s) white balsamic vinegar

  3. 4 ounce(s) feta cheese , crumbled 3 pound(s) mixed heirloom tomatoes , cut into chunks 25 cup(s) extra-virgin olive oil

  4. 1/2 teaspoon(s) extra-virgin olive oil

  5. 1/4 teaspoon(s) each salt and freshly ground pepper

  6. 1/2 cup(s) torn fresh basil leaves

  7. 8 slice(s) (1 in. thick) from a round loaf of semolina bread

  8. 1 large garlic clove , peeled and halved crosswise

  1. In a large serving bowl, combine onion, vinegar and feta cheese. Let stand until onions have softened, about 10 minutes. Meanwhile, heat grill.

  2. Add tomatoes, 1⁄4 cup oil, salt, pepper and basil to onion mixture; toss.

  3. Brush bread slices with 1⁄2 tsp oil and grill until lightly toasted. Spear garlic clove halves onto end of fork and immediately rub over hot bread slices. Serve with tomato salad.
