  2. Creole Red Beans and Rice

  7. 2 c Red beans,dried

  8. 6 c Water

  9. Salt to taste

  10. Black pepper to taste

  11. 1/4 c Bacon drippings

  12. 2 c Ham,diced

  13. 2 c Salt pork

  14. 2 c Sausage,smoked

  15. 1 c Onions,chopped

  16. 2 Garlic cloves,minced

  17. 1/4 c Parsley,chopped

  18. 4 c Rice,hot cooked

  19. 1. Rinse beans; soak in water 30 minutes, then cook slowly until tender,

  20. about 2 hours (add boiling water as necessary).

  21. 2. Add salt and pepper to taste.

  22. 3. Heat bacon drippings in skillet; saute ham, salt pork or sausage, then

  23. add onions and garlic, cooking until translucent.

  24. 4. Stir into cooked beans along with parsley.

  25. 5. Remove about 1 cup beans; mash or put through a sieve and stir into beans (this will thicken the juices).
