  1. 40 g mixed salad leaves

  2. 1 small orange , cut into segments

  3. 2 tbsp salad dressing

  4. 3 tbsp sesame oil

  5. 50 g duck breast , sliced

  6. 20 g hoi sin sauce

  7. 30 g mango coulis

  1. Mix the salad leaves, orange segments and dressing together in a large bowl.

  2. Heat the sesame oil in a frying pan over a high heat and fry the duck until crisp and brown.

  3. Stir in the Hoisin sauce.

  4. Place the salad on a plate, top with the duck and drizzle over the mango sauce. Serve immediately.
