  2. FRESH FRUIT TART WITH BANANA-'CREAM' FILLING

  8. 1 1/2 c Fine graham-cracker crumbs

  9. 3 tb Canola oil

  10. --filling--

  11. 1/3 c Orange juice

  12. 2/3 Plain gelatin

  13. 5 lg Ripe bananas

  14. 1/2 lemon

  15. 3 Plums -- sliced

  16. 1 c Red raspberries

  17. 1/2 c Blackberries or black raspbe

  18. --glaze--

  19. 1/3 c Frozen apple-juice concentra

  20. 2 tb Honey

  21. 6 lg Strawberries, washed, hulled

  22. CRUST: Place cracker crumbs in a medium bowl. Mix oil and honey

  23. together and stir into crumbs, working the mixture with your fingers.

  24. 9 or 10-inch pie tin. Bake at

  25. 350 for 10 minutes. Cool

  26. completely.

  27. FILLING: Combine orange juice and gelatin in a small oven-proof dish.

  28. Let soften 2 minutes, then place dish in a small saucepan containing

  29. 1/2 inch of water. Warm over low heat until gelatin melts, mixing

  30. while heating.

  31. Peel and slice 4 bananas and immediately combine with half of the

  32. lemon juice. In a food processor, puree banana slices with gelatin.

  33. Slice the remaining banana and arrange along bottom of baked, cooled

  34. pie shell. Pour pureed bananas into pie shell, covering slices. Tap

  35. pie gently settle contents. Cover with plastic wrap and refrigerate

  36. until firm, about hour.

  37. GLAZE: In a small saucepan, combine apple-juice concentrate, honey and minced strawberries. Simmer over low heat for 6 minutes, stirring

  38. frequently. Pre through sieve. Cool.

  39. When filling is firm, arrange plum slices in a circle, overlapping,

  40. on top the pie. Fill center of circle with alternating circles of red

  41. raspberries blackberries. Brush with glaze and refrigerate for at
