  1. 1 quart chicken broth

  2. 3/4 cup rice, cooked

  3. 2 egg yolks

  4. 1/4 cup lemon juice Salt and pepper to taste

  1. Slowly heat the broth to a light boil. Reduce heat to below a simmer and add the cooked rice. In a bowl, lightly beat the yolks with the lemon juice. Add one ounce of the warm broth to the egg mixture and mix well. Remove the broth from the heat and slowly whisk in the egg mixture. Warm over low heat for 20 minutes. Do not simmer. Check the seasonings. Serve immediately.
