  1. 1 1/4 pound(s) carrots , peeled and cut in diagonal slices

  2. 1 teaspoon(s) freshly grated orange peel

  3. 1/4 cup(s) fresh orange juice

  4. 2 teaspoon(s) butter or margarine

  5. 2 teaspoon(s) honey

  6. 1 teaspoon(s) grated fresh ginger

  7. 1/4 teaspoon(s) salt

  1. Place carrots in a large skillet, cover with water and bring to a boil. Reduce heat, cover and simmer until crisp-tender, about 3 minutes. Pour off water leaving carrots in pan.

  2. Add remaining ingredients and stir over medium-high heat until carrots are glazed, 1 to 2 minutes.
