  8. 2 Tablespoons Butter

  9. 1 Small Onion -- minced

  10. 9 Cups Chicken stock

  11. Salt

  12. Freshly ground white pepper

  13. 1/2 Teaspoon Thyme

  14. Pinch Freshly ground nutmeg

  15. 1 Cup All-Purpose flour

  16. 2 Eggs

  17. In a large saucepan, melt the butter. Add the onion and cook over

  18. 3 minutes. Stir in

  19. 8 cups of the

  20. chicken stock and bring to a simmer. Season with salt and white

  21. pepper to taste.

  22. Meanwhile, in a medium saucepan, combine the remaining 1 cup stock

  23. with the thyme, nutmeg, 1/2 teaspoon salt and a pinch of white pepper.

  24. Bring to a boil over high heat. Remove from the heat and beat in the

  25. flour until thoroughly blended. Let the mixture cool slightly, then

  26. beat in the eggs, one at a time.

  27. Drop tablespoons of the dumpling mixture into the simmering soup and cook until the dumplings begin to firm, about 5 minutes. Remove from

  28. the heat, cover the saucepan and set aside to steam the dumplings for 3 minutes before serving. - - - - - - - - - - - - - - - - - -
