  1. 1/4 lb butter

  2. 2/3 cup sugar

  3. 5 egg yolks

  4. 3 oz semi-sweet chocolate, melted

  5. 1 1/2 cups finely chopped almonds

  6. 3 Tbs bread crumbs

  7. 2 Tbs strong black coffee

  8. 1 Tbs rum or rum extract

  9. 5 egg whites, stiffly beaten

  1. Cream the butter and sugar until light and fluffy. Beat in the eggyolks one at a time. Add the chocolate, almonds, bread crumbs,coffee, and rum. Fold in the beaten egg whites.

  2. Butter the inside of a ring mold or Bundt pan andcoat with sugar.

  3. Pour the mixture into the mold and cover withaluminum foil. Place in a large pot of water that comes 2/3 up the side of the mold and simmer for 1 to 1 1/2 hours, until the pudding is completely set. Cool for 5minutes and invert onto a serving platter.

  4. Serve warm with whippedcream if desired.

  5. Serves 8 to 12.
