  2. 1 1b. whole wheat penne pasta, prepared

  3. 1/4 cup olive oil

  4. 3 cloves minced garlic

  5. 2 large shallots finely chopped

  6. 4 small zucchini (about 1 lb.), thinly sliced

  7. 2 cups patty pan squash, quartered

  8. 1 1/2 tsp. grated lemon peel

  9. 1/2 tsp. salt & pepper

  10. 1/2 cup fresh basil

  11. 1/3 cup fresh chives

  12. 1/2 fresh Parmesan cheese

  13. 2 minutes. Add zucchini and squash and cook till tender, about 6 minutes. Drain penne, reserving

  14. 1 cup cooking water.Stir lemon peel, salt and pepper and reserved water into squash mixture. Transfer penne to large serving bowl. Add squash mixture, basil and chives and toss to combine. Sprinkle with parmesan cheese and serve.
