  1. 1-1/2 lbs. boneless beef round steak

  2. 2 cups frozen corn, thawed and drained

  3. 18 oz. jar chunky garden salsa

  4. 14 oz. can black beans, rinsed and drained

  5. 1 onion, chopped

  6. 1/2 cup water

  7. 1/2 tsp. salt

  8. 1/8 tsp. crushed red pepper flakes

  1. Cut beef into 6 serving-size pieces and trim excess fat. Place in a 3-4 quart slow cooker. Mix remaining ingredients in a medium bowl and pour over beef. Cover crockpot and cook on low for 8-9 hours until beef is tender.

  2. servings If you have a new hotter cooking crockpot, check the beef after 5-1/2 hours on low.
