  1. 1 large head Cauliflower, chopped or shredded

  2. 1 1/2 cups salted peanuts (Red skinned Spanish peanuts look prettiest)

  3. 2 stalks celery, cut into half moon slices

  4. 1 pkg (7 oz) dried Cranberries or Craisins

  5. 2/3 c. fat-reduced Mayonnaise (not salad dressing)

  6. 1 tsp. white wine Vinegar or White Balsamic Vinegar

  7. 1/3 c. white Sugar Lettuce or salad greens of your choice In a large bowl, add all ingredients and mix well to combine. Cover and refrigerate at least

  8. 1 hour. Layer some lettuce or salad greens in a serving bowl. Place cauliflower salad over lettuce. Serve!
