  1. 1 cup rice , cooked

  2. 1/2 lb. Velveeta cheese , grated

  3. 1/2 pint sour cream

  4. 1 tbls. butter

  5. 1 small can jalapeno peppers, chopped fine after removing seeds and stems

  1. Add butter and sour cream to cooked rice. Mix. In greased casserole, place layer of rice mixture followed by layer of peppers and next, layer of cheese. Repeat.

  2. Bake at 350 degrees for 20 to 25 minutes.
