  1. 3 Tomatoes; sliced (3 to 4)

  2. 1 Red onion; chopped

  3. 1 tablespoon Harissa dressing

  4. 1 Lemon; juice of

  5. 3 tablespoons Extra virgin olive oil

  6. Salt and pepper

  7. 1 Sprigs coriander; roughly chopped

  1. In a small bowl mix together the ingredients for the dressing: the Harissa, lemon juice and olive oil (3-4 parts oil to 1 part lemon juice) and a pinch of salt. Whisk together and add freshly ground black pepper.

  2. Lay out the sliced tomatoes on a plate and sprinkle with the chopped onion, spoon the dressing over the tomatoes and garnish with the chopped coriander, if required, and serve immediately.
