  1. 1 cup 237ml Ripe papaya (large)

  2. 4 Lettuce leaves

  3. 2 oz 56g Paper-thin slices prosciutto

  4. (or smoked ham)

  5. 8 Ripe olives

  1. Pare the ripe papaya and remove seeds. Slice lengthwise into eight slices. Line 4 plates with lettuce leaves and arrange two strips of papaya on each plate. Gently wrap center of each piece of papaya with prosciutto.

  2. Garnish with olives.
