  1. Cooking oil spray

  2. 600g premium beef mince

  3. 1 tablespoon dried Moroccan spice

  4. 1 tablespoon chopped coriander

  5. 2 slices grain sandwich bread, soaked in

  6. 1/4 cup milk

  7. 1 tablespoon olive oil

  8. 1 onion, sliced

  9. 200g button mushrooms, sliced

  10. 1/2 cup chicken stock

  11. 100g marinated roasted capsicum, drained, sliced

  12. 1/2 cup light sour cream

  13. 250g couscous, prepared as packet directs, to serve

  14. Coriander sprigs, to garnish

  1. Preheat oven to 180C/160C fan forced. Lightly spray a baking tray with oil. Combine beef, spice, coriander and bread well in a large mixing bowl, using hands. Shape tablespoons into balls; place on tray. Bake for 20-25 minutes until cooked.

  2. Meanwhile, heat oil in a frying pan over moderate heat. Cook onion, stirring, for 2 minutes. Add mushrooms; cook for 3 minutes. Add stock; cook for 2 minutes. Stir through capsicum and sour cream. Season to taste with salt and black pepper.

  3. Add meatballs and heat, stirring. Serve with couscous. Garnish with coriander.
