  1. 2 pounds stew beef, diced

  2. 8 cups water

  3. 1 onion, chopped

  4. 1 cup tomato ketchup

  5. 1 tablespoon salt

  6. 1/2 teaspoon dried thyme

  7. 1/2 cup split green peas

  8. 1 1/2 cups loose-pack frozen corn

  9. 1 potato, peeled and diced

  10. 1 cup chopped spinach

  11. 1 cup green beans, sliced

  12. 1 cup fresh or loose-pack frozen peas

  13. 6 carrots, peeled and sliced

  14. 3 cups diced celery

  15. 1 green bell pepper, seeded and diced

  16. 2 tablespoons chopped flat-leaf parsley

  17. 3 tomatoes, seeded and chopped

  1. In a large kettle cover diced stew beef with water. Add chopped onion, ketchup, salt, and thyme. Bring to a boil. Skim the surface. Add split green peas; cover and simmer over low heat for 3 to 4 hours. Add corn, diced potato, chopped spinach, sliced green beans, peas, sliced carrots, diced celery, diced green bell pepper, chopped parsley, and chopped tomatoes. Cover and simmer 30 minutes.
