  1. 1 cup 160g / 5.6oz Cooked couscous

  2. 1 Scallion - thinly sliced

  3. 1 Celery rib - finely diced

  4. 1 cup 62g / 2 1/5oz Smoked or regular cooked chicken - cut bite-size chunks

  5. 1 cup 237ml Frozen peas - thawed

  6. 1 oz 28g Blue cheese

  7. 1/3 cup 78ml Mayonnaise

  8. 1 teaspoon 5ml Dijon mustard

  9. Rice vinegar - to taste

  10. Salt - to taste

  11. Freshly-ground black pepper - to taste

  12. Chopped fresh parsley

  1. In a mixing bowl combine the couscous, scallion, celery, chicken and peas.

  2. In another mixing bowl combine blue cheese, mayonnaise, mustard and rice vinegar to taste; season with salt and pepper. Add the chicken-couscous mixture and fold to combine. Garnish with chopped parsley.
