  1. 1/2 cup sultanas

  2. 1/3 cup brandy

  3. 1 litre milk

  4. 2/3 cup sugar

  5. cup aborio or short-grain rice

  6. 2 strips lemon rind

  7. 1 teaspoon cinnamon

  8. 1 teaspoon vanilla essence

  9. 300ml cream, whipped

  10. honey or maple syrup, to drizzle

  11. toasted almonds, if desired

  1. Pour brandy over sultanas. Set aside to absorb.

  2. Place milk and sugar in a large saucepan. Bring to the boil. Whisk in the rice, lemon rind, vanilla and cinnamon and reduce heat.

  3. Simmer, covered, for an hour whisking occasionally to ensure the mixture doesn't get lumpy.

  4. Fold through cream and sultanas.

  5. Serve drizzled with honey and sprinkled with nuts.
