  1. 3 cups self-raising flour

  2. pinch salt

  3. 60g butter, chopped

  4. 310g can Golden Circle corn kernels, drained, rinsed

  5. 1 cup grated tasty cheese

  6. 3 rashers rindless bacon, finely chopped

  7. 2 tablespoons snipped chives, plus extra, to serve

  8. 1 3/4 cups buttermilk

  9. butter, to serve

  1. Preheat oven to very hot, 220°C. Lightly grease 20cm square cake pan. Sprinkle with a little flour, shaking out any excess.

  2. Sift flour and salt into a large bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Stir in corn, cheese, bacon and chives.

  3. Make a well in centre of the flour mixture. Add buttermilk. Using a blunt knife, mix to a soft, sticky dough.

  4. Turn onto a lightly floured surface and knead lightly into a round. Press or roll out until 3cm thick.

  5. Cut dough into rounds using a floured 5.5cm cutter. Arrange scones close together in prepared pan.

  6. Bake for 15-20 minutes until golden and scones sound hollow when the underside is tapped. Sprinkle with extra chives and serve warm with butter.

  7. Top tips Don't over-handle the dough, otherwise you'll end up with tough scones.If you don?t have buttermilk, use milk or low-fat milk.
