  5. 1 lb dried beans

  6. 2 t salt

  7. 2 qt water

  8. 1 lb smoked ham shank

  9. 1 c onion

  10. 24 oz canned tomatoes

  11. 1/4 c fresh lemon juice

  12. 1 t garlic

  13. combine beans, salt, and water to cover in a large pot, over a high flame

  14. heat to a boil, cook for 5 minutes, remove from heat, cover, and let

  15. stand for 1 hour

  16. drain, rinse, and drain well

  17. combine beans, 2 quarts water, and sausage or ham hocks heat to a boil,

  18. reduce heat, and simmer for 2-3 hours

  19. add remaining ingredients-mix well

  20. season to taste

  21. simmer for 30 minutes, until beans and sausage or hocks are tender

  22. remove sausage or hocks from beans

  23. cut into bite-size pieces, discarding bones, and return to pot serve hot,

  24. with hot buttered

  25. cornbread to the side --
