  1. Syllabub

  2. 1/4 tsp ground nutmeg

  3. 1 piece lemon peel

  4. 1/2 pint sweet white wine

  5. 1/2 pint double cream

  6. 2 floz sherry

  7. 1 tsp orange flower water

  8. 2 egg whites

  10. 1/2oz caster sugar

  11. 6floz wine

  12. 2floz milk

  13. Leave the nutmeg and lemon peel to steep in the wine overnight.

  14. Strain the wine and add it to the cream with the sherry and orange

  15. flower water. Whip the egg whites until stiff. Fold into the cream

  16. and continue whipping with a wire whisk. Combine the milk and wine

  17. for the base and pour a little into six glasses. As you whip the

  18. cream and wine mixture, spoon the resulting froth onto the wine

  19. base as you go along. Serve as soon as possible.
