  1. 1 lb Shad fillets, boned, skinned

  2. Salt; to taste

  3. White pepper; to taste

  4. 1/4c Dry white wine

  5. 1 tb Lemon juice

  6. 1/4c Chopped sorrel leaves

  7. 1 tb Unsalted butter

  1. + PLACE SHAD IN A MEDIUM saute pan and sprinkle with salt and pepper.

  2. Add the wine and lemon juice and sprinkle the pan with sorrel.

  3. Cover and place over medium heat for 8 minutes.

  4. Remove the shad from the pan and keep warm on a plate.

  5. Add the butter and cook, stirring with a wooden spoon, until incorporated.

  6. Pour the sauce over the fish and serve immediately.
