  1. 4 (about 2-cups) carrots , sliced

  2. 1 large (about 1-cup) onion , sliced

  3. 2 stalk(s) (about 1-cup) celery , sliced

  4. 3 clove(s) garlic , minced

  5. 1 teaspoon(s) crushed dried thyme leaves , or 1 tablespoon chopped fresh thyme leaves

  6. 4 cup(s) Swanson® Chicken Broth

  7. 2 (about 3-cups) zucchini , sliced

  8. 4 plum tomatoes , chopped

  9. 1 1/2 cup(s) cheese-filled tortellini

  10. 1 can(s) (15-oz) red kidney beans , rinsed and drained

  11. Grated Parmesan cheese

  1. Place the carrots, onion, celery, garlic, thyme and 2 cups of the broth in a 6-quart saucepot. Heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the onion is tender.

  2. Add the remaining broth, zucchini, tomatoes, tortellini and beans. Heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the tortellini is tender. Serve with grated Parmesan cheese if desired.
