  1. 7 cups chopped carrots

  2. 7 cups sugar

  3. 3 lemons, seeds, pulp & rind removed

  4. 1 orange, seeds, pulp & rind removed

  1. Run carrots, lemons & orange through a food processor. Put all ingredients in a large pan bring to a boil. Cook on medium low for an hour or until marmalade is thick.

  2. Put in sterilized jelly jars and seal with a layer of hot wax.

  3. Store in a cool dark place.
