  2. Asparagus Salad With Raspberry Vinegrette

  7. 2 pounds Fresh asparagus -- washed well

  8. 1 pieces 1 Red pepper -- seeded and cut in 1 pcs.

  9. 1 Red onion -- chopped

  10. 1/2 cup Raspberry vinegar

  11. 1/2 cup Water

  12. 1 tablespoon Sugar or honey

  13. 1 teaspoon Parsley

  14. Steam the asparagus pieces for 2 minutes. Plunge into cold water to stop

  15. cooking. Drain. Put asparagus, red pepper and onion into a plastic bowl (with cover). Blend

  16. vinegar, water, sugar (honey) and parsley in a separate bowl and then pour

  17. over vegetables. Adjust seasonings if desired (may want to add more

  18. 24 hours. Stir every

  19. so often.
