  1. 2 cups (8 ounces) shredded Wisconsin sharp cheddar cheese

  2. 2 tablespoons butter

  3. 1/4 cup stale beer

  4. 1/4 cup cream

  5. 1 large egg

  6. 1/4 teaspoon Worcestershire sauce

  7. 1/4 teaspoon paprika

  8. 1/4 teaspoon dry mustard

  9. 1 tomato, sliced

  10. 1/4 inch thick 2 English muffins, halved and toasted

  11. 8 slices bacon, cooked and drained

  1. Combine cheese, butter, beer and cream in top of double boiler. Place over simmering water; stir until cheese is melted and mixture is smooth. Beat in the egg until well blended. Stir in Worcestershire sauce, paprika and dry mustard. Place 1/4 inch thick slice of tomato on each muffin half. Top with bacon strips and rarebit sauce.
