  1. 200g or 4 large, flat portabello mushrooms

  2. 200g low-fat cream cheese

  3. 60g or 4 spring onions, chopped

  4. 100g ham, diced

  5. 25g oats

  6. 2tbsp coarse oatmeal

  1. Preheat the oven to 200ºC, gas mark 6.

  2. Make 2 large squares of foil, place 2 mushrooms on each, skin side down. Spoon the cream cheese over the mushrooms, then sprinkle over the spring onions and ham.

  3. Mix together the oats and oatmeal and dry fry in a pan, sprinkle over the mushrooms. Fold over the foil and seal to create a parcel. Place the 4 parcels on a large baking tray and bake for 20 mins.

  4. Ideal served hot or cold.
