  1. 1 cup couscous , prepared according to package directions

  2. 1 (15 ounce) can black beans , rinsed and drained

  3. 1 cup small diced peeled ripe papaya

  4. 1 cup shredded spinach

  5. 2 tablespoons lime juice

  6. 2 tablespoons olive oil

  7. 1/2 teaspoon ground cumin

  8. 1/8 teaspoon cayenne pepper

  9. 1/4 cup chopped smoked salted almond

  1. Prepare couscous using water or chicken broth (we prefer chicken broth because it's more flavorful).

  2. Cool for 10 minutes.

  3. Add remaining ingredients.

  4. Add more lime juice if you want more flavor. ?
