  7. 2 eggs -- separated

  8. 1/4 cup fresh lemon juice

  9. 1 tablespoon lemon zest -- grated

  10. 3 tablespoons all-purpose flour

  11. 1 cup sugar

  12. 2 tablespoons butter

  13. 1 1/4 cups boiling water

  14. 1 9 inch pie crust

  15. 3 tablespoons sugar

  16. In a heavy saucepan, beat egg yolks with lemon juice and zest. Place

  17. under low heat. Beat in flour, 1 cup sugar, and butter. Add boiling water,

  18. cook and stir until mixture thickens. Pour into prepared pie crust. Beat egg

  19. whites until stiff, but not dry. Gradually add 3 tablespoons sugar. Spread
