  1. 4 chicken breasts, skinless and boneless

  2. 1 cup Brazil nuts, finely ground

  3. 1/4 cup fresh bread crumbs

  4. 2 eggs

  5. 1/2 cup flour

  6. 2 tbsp. extra virgin olive oil

  7. Salt and pepper to taste

  1. Beat the eggs together in a bowl until combined. In another bowl, combine the ground Brazil nuts and bread crumbs.

  2. Season the chicken breasts with salt and pepper. Dip each chicken breast in the egg mixture then dredge each piece in the nut/flour mixture. Repeat with remaining chicken breasts.

  3. Heat the olive oil in a skillet over medium-high heat. Place each chicken breast in the skillet and cook for 4-5 minutes on each side, depending on the thickness.

  4. Plate and serve as desired
