  1. Carrot Cake

  2. 3 C unbleached white flour

  3. 2 C sugar

  4. 1 C shredded coconut

  5. 2 1/2 tsp baking soda

  6. 2 1/2 tsp cinnamon

  7. 1/4 tsp nutmeg

  8. 1 tsp salt

  9. 2 C shredded carrots

  10. 1 1/4 C oil

  11. 2 tsp vanilla

  12. 1 tsp grated orange zest

  13. 11 ounce can mandarin oranges, undrained

  14. 3 eggs

  15. Mix all ingredients for 2 minutes at highest speed on electic mixer.

  16. 9x13-inch pan and bake at

  17. 350 F for 40-50 minutes. Let

  18. cool in pan for 10-20 minutes before removing.

  19. Tastes better if made 2 days in advance and allowed to mellow in

  20. refrigerator.
