  1. Recipe Instructions In a large stock pot, heat the oil and saute the onions until tender. Add the beans, lentils, and/or barley with stock to cover, bring to a boil, lower heat, and simmer 20 minutes. Toss in the rest of the ingredients, bring to a boil with more stock, reduce heat, cover, and simmer until the vegetables are cooked but not too soft -- about 30 minutes or so.
