  1. 1/2 cup KRAFT Zesty Italian Dressing , divided

  2. 1 lb. bay scallops

  3. 4 plum tomato es (1 lb.), seeded, chopped

  4. 1 large mango , peeled, chopped

  5. 1-1/4 cups chopped jicama

  6. 4 green onions , chopped

  7. Juice from 1 large orange

  8. 2 serrano chile s, chopped

  9. 1/4 cup ketchup

  10. 2 Tbsp. hot pepper sauce

  11. 2 cloves garlic , minced

  1. HEAT 2 Tbsp. dressing in large skillet. Add half the scallops; cook and stir 2 to 3 min. or until opaque. Remove from pan. Repeat with remaining scallops and dressing. Cool completely.

  2. COMBINE scallops with remaining ingredients.

  3. REFRIGERATE 1 hour. Serve with PREMIUM Saltine Crackers, if desired.
