  3. 3 tablespoons bacon drippings

  4. 1 medium eggplant -- cubed

  5. 4 medium tomatoes -- cubed

  6. 1 teaspoon salt

  7. 2 teaspoons chile powder

  8. 2 tablespoons all-purpose flour

  1. Preparation : Saute onion and green pepper in bacon drippings in a large skillet. Add next 4 ingredients; cover and cook over medium heat 10 to 12 minutes. Stir in flour and cook, uncovered, for 2 minutes.
