    1. 1 stick butter

    2. 2 eggs

    3. 2 c. all purpose flour, sifted

    4. 2 tsp. baking powder

    5. 1 tsp. lemon juice

    6. 1/4 c. coconut

    7. 1 c. sugar

    8. 3 bananas, well ripened, mashed

    9. 1 tsp. soda

    10. 1/2 tsp. salt

    11. 1/4 c. chopped pecans or walnuts

    1. Cream melted butter and sugar; add eggs and bananas. Stir in nuts and dry ingredients. Place in a well greased and floured loaf pan. Bake 1 hour at 375 degrees. Sprinkle with powdered sugar if desired. This cake bread freezes well.
