  1. 2 lg. chicken breasts cooked & diced

  2. 1 1/2 c. red grapes halved

  3. 1 1/2 c. black grapes halved

  4. 1 1/2 c. bing cherries pitted & halved

  5. 3/4 c. blueberries

  6. 1 nectarine or peach 2 celery stalks sliced diagonally

  7. 1/2 lg. red onion thinly sliced

  8. 1/2 c. mayonnaise

  9. 1/4 c. horseradish mustard or spicy brown mustard

  10. 2 t. lemon juice

  11. Fresh ground black pepper to taste

  12. 3 large cantaloupe rings

  13. 1/3 c. slivered almonds toasted

  1. In a large bowl, combine chicken, fruit, celery and onion. In a separate bowl, combine mayonnaise, mustard, lemon juice and pepper. Add to chicken mixture; mix well.

  2. Place salad into center of melon rings. Garnish with almonds. Yield: serves 3
