  1. 1 lb shrimp , cooked deveined and shelled, tails off

  2. 1 lb orzo pasta , cooked and cooled

  3. 1 pint grape tomatoes , halved

  4. 1 cucumber , diced

  5. 1/2 cup onion , diced

  6. 1/2 cup orange juice

  7. 2 tablespoons lemon juice

  8. 2 tablespoons lime juice

  9. 1/4 cup parsley , chopped

  10. 2 tablespoons oregano , chopped

  11. 2 tablespoons olive oil

  12. 2 teaspoons Dijon mustard

  13. salt and pepper

  14. 6 ounces reduced-fat feta cheese

  1. Mix orzo, shrimp, tomatoes, cucumbers, and onions.

  2. Mix remaining ingredients in a blender or shaker and pour over salad.

  3. Alow to chill for several hours if have time. Spoon onto plates and sprinkle with feta cheese. and enjoy.
