  1. 6 tablespoons 90ml Butter or margarine

  2. 1 cup 62g / 2 1/5oz Onion - chopped

  3. 1/2 cup 55g / 1.9oz Celery - chopped

  4. 1/2 cup 73g / 2.6oz Green pepper - chopped

  5. 6 tablespoons 90ml Flour - all-purpose

  6. 1 1/2 cups 355ml Milk

  7. 1 1/2 teaspoons 7 1/2ml Salt

  8. 1 teaspoon 5ml Pepper

  9. 1/4 teaspoon 1 1/3ml Thyme

  10. 1 Hot sauce

  11. 1 lb 454g / 16oz Fish fillets; thawed

  12. 1 cup 146g / 5.1oz Breadcrumbs

  13. 1/2 cup 73g / 2.6oz Cheese, cheddar; shredded

  1. Melt butter over low heat in a saucepan; saute onion, celery, and green pepper until tender. Blend in flour, stirring well. Gradually add milk, stirring constantly. Cook over medium heat, stirring constantly, until smooth and thickened. Add salt, pepper, thyme and hot sauce, blend well.

  2. Place fish fillets in a buttered 8" square baking dish; cover with sauce. Combine breadcrumbs and cheese; sprinkle over sauce. Bake at 450F for 20 to 25 minutes or until fish is done.
