  7. 4 Blue crabs, lg

  8. Oil

  9. 1 lb Cooked ham, cut in

  10. 1/2 lb Chicken gizzards, sliced

  11. 2 cn Whole tomatoes (1-lb 12 oz)

  12. 2 Onions, lg, diced

  13. 5 Celery stalks, diced

  14. 2 lb Chicken wings and backs

  15. 1/4 c Sugar

  16. Salt, pepper

  17. Hot pepper sauce

  18. 4 lb Shrimp

  19. 1 1/2 lb Beef stew meat, in

  20. 1 cubes

  21. 1 lb Link sausage, sliced

  22. 1 lb Salt pork, cut in

  23. 1/2 Cubes

  24. 4 Bay leaves, crumbled

  25. 2 Gn bell peppers, lg, diced

  26. 4 Cloves garlic, crushed

  27. 1 1/2 lb Okra, fresh

  28. 1/4 c Parsley flakes, dried

  29. Hot cooked rice

  30. Crackers

  31. Clean crabs, discarding spongy substance in main

  32. shell. Reserve claws and other meaty portions. Clean

  33. shrimp, reserving shells. Place shrimp shells in deep

  34. saucepan with water to cover generously and simmer 30

  35. minutes or longer to make broth. Pour oil into heavy

  36. skillet to depth of 1/8 inch. Heat and add beef, ham,

  37. sausage, gizzards and salt pork. Saute until lightly

  38. browned, stirring occasionally. Pour meat mixture into large kettle and add 1 can tomatoes and enough

  39. strained shrimp broth to cover generously. Add bay

  40. 30 minutes. Heat

  41. tablespoons more oil in skillet and add onions, green

  42. peppers, celery and garlic. Saute until lightly

  43. browned, stirring now and then. Add vegetable mixture

  44. and chicken parts to kettle and simmer 30 minutes

  45. longer. Heat 2 tablespoons oil in another heavy

  46. skillet, add okra and cook, stirring often, until

  47. lightly browned and loses stickiness, about 30

  48. minutes. Add shrimp to okra and saute 3 or 4 minutes

  49. longer, or until shrimp turns pink. Stir in 2

  50. tablespoons sugar. Add okra mixture to kettle. Drain

  51. second can of tomatoes, reserving liquid. Add

  52. tomatoes, crab and enough tomato liquid and water from

  53. shrimp shells to keep mixture in kettle soupy. Simmer

  54. 30 minutes. Add parsley flakes and remaining

  55. tablespoons sugar. Season to taste with salt and pepper. Serve at once or refrigerate and reheat later.

  56. Serve over hot rice in deep soup bowls. Pass hot

  57. pepper sauce and crackers with gumbo, if desired. - - - - - - - - - - - - - - - - - -
