  1. 1 1/2 cups dried maraschino cherries

  2. 1/2 cup red wine vinegar

  3. 1/4 cup balsamic vinegar

  4. 2 tbs. olive oil

  5. 1 cup chopped yellow Spanish Sweet onion

  6. 2 tbs granulated sugar Salt and pepper to taste

  1. In a medium bowl, combine cherries and both vinegars.

  2. Let soak for 30 minutes.

  3. Heat oil in a large skillet.

  4. Add onion; cook 5 minutes or until onion is soft. Add sugar;mix well.

  5. Add cherries with soaking liquid; stir to thoroughly combine ingredients.

  6. Cook, uncovered until almost all the liquid is evaporated.

  7. Season with salt and pepper.

  8. Serve at room temperature.<
