  1. Ingredients :Serves 4

  2. 1 whole 4 tablespoons 2 tablespoons Hot Basil and Chili Sauce

  3. 1 tablespoon 3 cloves

  4. 2 1 tablespoon 1 tablespoon 1 tablespoon 1 tablespoon 1 teaspoon 10 Fresh fish (about 450 g), deboned

  5. Flour, mixed with a pinch of salt and white pepper

  6. Oil for deep frying

  7. Oil

  8. Garlic, minced

  9. Red chilies, sliced

  10. Sugar

  11. Oyster sauce

  12. Fish sauce

  13. Soy sauce

  14. White pepper

  15. Basil leaves

  1. To make the Hot Basil and Chili Sauce,heat the oil in a wok or saucepan over medium heat.

  2. Add the garlic and chilies and stir-fryfor about 1 minute until fragrant.

  3. Add the sugar, oyster sauce, fish sauce,soy sauce and pepper, and stir fry for a further minute.

  4. Finally add the basil leaves, mix well andquickly remove from heat. Set aside.

  5. Dip the fish in the flour mixture to coatthoroughly. Heat the oil in a wok over high heat.

  6. Deep fry the fish for 3 to 5 minutes untilgolden brown and crispy.

  7. Remove and drain the excess oil on papertowels. Place on a serving platter.

  8. Pour the Hot Basil and Chili Sauce overthe deep fried fish and serve immediately.
