  1. 225g plain flour

  2. 75g caster sugar

  3. 1 tablespoon baking powder

  4. 1/2 teaspoon salt

  5. 2 eggs

  6. 160ml semi skimmed milk

  7. 5 tablespoons butter, melted

  8. 1 teaspoon grated lemon zest

  9. 8 tablespoons raspberry or strawberry jam

  1. In a large bowl, combine flour, sugar, baking powder and salt.

  2. In a small bowl, beat eggs, then add milk, butter and lemon zest. Pour into dry ingredients and stir just until moistened - don't overmix otheriwse your muffins won't rise properly.

  3. Spoon 1/2 of the muffin mixture into 12 muffin cups lined with paper cases (silicone cases work well too). Make a well in the centre of each; spoon in jam. Spoon remaining batter over jam. Bake at 200 C / Gas 6 for 20-25 minutes or until golden.
