  1. Lentil Rice Burgers

  2. Yield: 6 servings

  3. 1/2 c white rice, cooked; cooled

  4. 1/2 c lentils; cooked

  5. 1 sm sweet potato; peeled, cooked, minced

  6. 8 spinach leaves; rinsed, blanched, finely shredded

  7. 1/2 c mushrooms, fresh; chopped

  8. 1 ts soy sauce, low sodium

  9. salt and pepper to taste

  10. 1/2 c bread crumbs, dry

  11. 1 tb cilantro; finely chopped

  12. Combine rice, lentils, sweet potato, spinach and mushrooms in a

  13. large bowl. Add soy sauce, salt and pepper. Add bread crumbs and 15 to 39 minutes.

  14. 6 to 8 patties. Oil a vegetable grill generously,

  15. 3 to 4 minutes on each side, until

  16. 6 to 8 patties.

  17. Variation: Instead of burgers, form mixture into small balls. Grill

  18. until browned. Serve as a snack with a dipping sauce or add to

  19. pasta with your favorite sauce.
