  1. 2 lbs 908g / 32oz Bream fillets or pan-dressed bream

  2. 2 Eggs

  3. 1/2 cup 118ml Buttermilk

  4. 1 1/2 cups 219g / 7.7oz Ritz crackers - crushed to meal

  5. 1/2 cup 31g / 1.1oz Flour

  6. Peanut oil - for frying

  1. In a small bowl, beat eggs until frothy. Add buttermilk and mix.

  2. In a zip-seal plastic bag, shake together the cracker meal and flour.

  3. Dip fish in buttermilk mix, then drop in the zip-seal bag, seal and shake to coat.

  4. Fry the fish until golden brown and flaky in peanut oil heated to 375 degrees.
