  9. 1 pound Dried lima beans

  10. 1/4 cup Chicken fat

  11. 3 pounds Kosher brisket of beef

  12. 1 Clove garlic -- mashed

  13. 1 teaspoon Paprika

  14. 1 pound Potatoes -- pared and quartered

  15. 1/3 cup Flour

  16. 2 cups Concord Grape or dry red win

  17. 3 Lg onions -- chopped

  18. Pick over the lima beans and soak overnight,and drain. In a 5 qt pot heat

  19. the fat and brown the onions. Remove from pot with slotted spoon and set

  20. aside. Rub the brisket with the garlic and paprika.Season with salt &

  21. pepper. Brown the meat on all sides. Add the onions,potatoes and lima

  22. beans. Sprinkle the flour over and pour on the wine. Add enough water to

  23. cover.Bring to a boil and reduce heat to a simmer.Simmer for 4

  24. hours,checking water level occassionally.(or bring to a boil and place in a

  25. 450 oven for 30 minutes.Reduce heat to

  26. 250 and bake for 1 hour.
