  1. 1 1/4 cup Whole wheat flour

  2. 1 cup Oat bran

  3. cup Packed brown sugar

  4. 2 1/2 teaspoon Baking powder

  5. teaspoon Baking soda

  6. teaspoon Salt

  7. teaspoon Ground nutmeg

  8. teaspoon Ground cinnamon

  9. 1 cup Low/non-fat buttermilk

  10. 2 Egg whites'

  11. 2 tablespoons Oil replacement

  12. Prune puree, etc)

  13. cup Shredded, peeled apple

  1. MIX & SET ASIDE COMBINE ADD Combine dry ingredients. Mix wet ingredients in a small bowl. Add to wet ingredients to dry ingredients until just moistened.

  2. Mix apple into batter.

  3. Spray muffin cups with non-stick spray and spoon about ¼ cup batter into each muffin cup. Bake in a 375 F oven for 18-20 minutes or until a toothpick inserted near the center comes out clean.

  4. Muffins.
