  1. Pork with Apples

  2. 3 med Granny Smith apples, peeled, cored, quartered, and sliced

  3. 1 small Vidalia onion, halved and sliced thin

  4. 2 Tbsp lemon juice

  5. 1 clove garlic, sliced thin

  6. 1 heaping tsp dried thyme, or 1 tsp fresh thyme

  7. 1/2 tsp powdered ginger

  8. salt and pepper to taste

  9. 2 Tbsp butter

  10. 4 boneless (loin) pork chops

  11. plenty of fresh-ground pepper

  12. splash of lemon juice or white wine

  13. 1-2 T maple syrup

  14. Gently saute apples, onion, lemon juice, garlic, thyme, ginger,

  15. salt and pepper and butter. Do not let scorch, or garlic will be

  16. bitter. Apples should be tender. Set all aside. Add porkchops

  17. and pepper to skillet. Saute on both sides until mostly done.

  18. Remove from heat, slice into 1/4" thick strips. Meanwhile, deglaze

  19. the pan with lemon juice or white wine.

  20. Return meat and apple mixture to pan, along with maple syrup.

  21. Cook over low heat a few minutes, until pork is done. If desired,

  22. thicken with a little cornstarch. Adjust seasonings-- usually needs

  23. a little more salt. Serve over egg noodles.
