  8. 1 1/2 cups unsalted butter

  9. 2 cups light brown sugar

  10. 1/2 cup molasses

  11. 2 eggs

  12. 4 1/2 cups unbleached allpurpose flour

  13. 4 teaspoons ground ginger

  14. 4 teaspoons baking soda

  15. 1 teaspoon salt

  16. 3 tablespoons fresh ginger -- grated

  17. 1 cup candied ginger -- finely chopped

  18. Preheat oven to 350 degrees. Cream butter and brown sugar until

  19. fluffy. Add molasses and eggs and mix well. Combine flour, ground

  20. ginger, baking soda and salt, and add to butter mixture. Blend in

  21. fresh and candied ginger. Drop by teaspoonful onto parchment covered

  22. 2 inches apart. Bake about 10 minutes, or until

  23. lightly golden. Cool. Yield: 8 dozen Ginger Snaps - - - - - - - - - - - - - - - - - -
